Taggiasca varietal originates from Italy and we grow it in the foothills of Northern California. A clmate that has a warm Mediterranean climate but cools in the evening. This allows the olives to ripen at a slower pace and develop a deeper fruit flavor. It's cold pressed and deliciiously fresh. This oil is fruity and complex with a peppery finish. It is perfect over a salad with seasonal fruit , as a deipping oil and as a finishing oil over cooked or grilled vegetables. Let imagination be your guide.
